I need syrup on mine. I'm also picky when it comes to syrup, but there's this knock-off brand of syrup that I like that's easy to get so that doesn't really come up. I also like having the pad of butter on it, but it's not essential like the syrup.
Also connected to the syrup: I don't want my pancakes stacked up straight and prefer them separated as much as possible so they get the syrup evenly when I pour it.
Personally, though, I ain't too crazy about pancakes and don't eat them often.

I can only eat pancakes two ways, which is either chocolate-chip pancakes drowned in syrup or "pizza pancakes" (small-chopped pepperoni & and handful of shredded cheddar cheese) just get eaten plain.
Syrop is the wrong kind of sweet for me so I have either honey + lemon or nutella, and occasionally strawberry/ raspberry/ cherry jam. Also since I'm from the UK I have thin pancakes, more like crepes than the thicker American style ones, & they get rolled or folded up once they've got their topping on them
In Sweden, pancakes are a bit different, they're thinner and eaten with jam, whipped cream and sugar. I have never seen syrup on a pancake and it sounds disgusting.
Eating them is a battle against time because I eat them with lots of butter and syrup, but I'll leave them if the butter isn't completely melted and combined with the syrup and you need the pancake really warm for that (and they don't stay like that for long)
when i do pancakes i set up a pancake station with my ingredients so i can make 3 different toppings
i dont eat pancakes if i can avoid it

I prefer to eat em with strawberry, bananas, strawberry syrup, and whipped cream, but more often than not I'll just eat them with peanubutter on them... OR I really like chocolate chip pancakes with strawberries and whipped cream but NO syrup.
I looooove fruit either on top of or mixed into the pancakes, especially bananas and strawberries~
